The Andritch take on the bog standard chocolate chip cookie, but a little richer and saltier.

Ingredients

  • Unsalted Butter
  • White Sugar
  • Dark Brown Sugar
  • Eggs
  • All Purpose Flour
  • Kosher Salt
  • Baking Soda
  • Cinnamon
  • Large Chocolate Bars

Directions

Step 1

Brown butter in a saucepan on medium heat until amber in color with sediment on the bottom of pan. Put butter and chocolate bars in fridge. Butter should be solid for next step.

Step 2

In a mixer, mix butter, white and brown sugar until smooth.

Step 3

Add eggs and mix to combine. Do not over-mix once eggs are added.

Step 4

In a separate bowl, combine flour, kosher salt, baking soda, and cinnamon. Notice flour is by weight, this helps with consistency.

Step 5

Add half of flour mix to mixer and combine, then add 2nd half (Add it all at once if you love cleaning flour out of your hair).

Step 6

Chop chocolate bars into small but non-uniform chunks and add to dough (Uneven chunks helps balance very chocolatey portions with doughier portions. Tony Chocolonely and Dove are both great options).

Step 7

Put cookie dough in fridge for at least 1 hour. (Yes, this really makes a difference!)

Step 8

Prepare cookies into hearty spoonfuls. Split balls in half and push back together so craggy parts are facing up. Springly lightly with kosher salt.

Step 9

Bake at 350°F for 12-17 minutes.
